DARK VS. LIGHT ROAST COFFEE
Light roast coffee has a lighter color and is roasted for a shorter period of time. Because of this, it retains more of the natural flavor characteristics of the coffee beans, such as fruity, acidic and bright notes. The coffee also has a higher acidity and less body than dark roasts.
Dark roast coffee, on the other hand, is roasted for a longer period of time, resulting in a darker color and a more robust and intense flavor. The coffee has a more developed body and lower acidity, and it tends to have less of the original character of the beans and more of the flavors created by the roasting process, such as chocolate, caramel and smoke notes.
The roast degree also affects the caffeine content of the coffee, where light roasts have more caffeine than dark roasts. This is because caffeine is burned off during the roasting process and dark roast coffee beans have lost more caffeine than light roast coffee beans.
It's worth noting that, while these are general characteristics of light and dark roast, actual flavor profile can vary depending on the beans, the roaster and other factors.
